Ingredients:
150g butter (softened), unsalted
2 tsp caster sugar
1 egg
1 tsp vanilla extract
1/4 tsp salt
200g plain flour
½ tsp baking soda
Chocolate chips (dark, milk, or white chocolate)
Desiccated coconut
Note: If you want them sweeter, put some more sugar (personal preference)
How to Make These Awesome Cookies
Step 1:
First off, let's start by mixing the butter and sugar in a bowl until it's nice and smooth. Then, beat the egg with the vanilla and add it to the butter (don't worry if it doesn't look perfect).
Next, throw in the flour, baking soda, salt, chocolate chips, and coconut. Mix everything together until you've got a good dough. Wrap it up with some cling film and pop it in the fridge for 30 minutes.
Step 2:
Get the oven preheated (180°C, 160°C fan, gas 4).
Line a baking tray with some baking paper (grease the tray first), then grab the cookie dough from the fridge. Scoop out around 11 medium-sized cookies onto the tray (more or less depending on your preference), making sure to leave some space between each cookie for spreading.
Bake them for about 10-15 minutes until they've got golden edges and a soft center (they'll firm up as they cool down).
Once they're done, let the cookies cool on the tray for a bit before eating. Enjoy!
