Delicious Baked Cheese and Veggie Recipe for Easy Lunch or Dinner

Ingredients:
200g mozzarella or homemade cheese
250g mixed cherry tomatoes
1 small red onion
A few kalamata olives
5, 6 sundried tomatoes
2, 3 mini peppers
Fresh rosmary
Olive oil
Salt and freshly ground black pepper
How to make this dish:
Step 1:
Get your veggies ready. Cut the cherry tomatoes in half, slice the onion into half moons, chop the mini peppers, and slice the olives.
Step 2:
Grab a pie dish (22 x 16 cm - it's just the right size for one serving). Drizzle some olive oil in the dish, then layer some tomatoes and onions at the bottom. Add the mozzarella, then top with more tomatoes, onions, olives, sun-dried tomatoes, and peppers. Sprinkle some fresh rosemary, salt, and pepper for flavor, and finish off with a drizzle of olive oil.
Pop it in the oven and bake for 25 - 30 minutes at 180°C (fan).
